Courses are run by experienced local chefs using seasonal mainly organic produce. The cuisine is authentic rustic Le Marche cooking. Students will learn how to produce a typical Le Marche meal and students will learn how to create local specialities like rabbit with pancetta, pumpkin risotto, nettle ravioli and deep fried battered sage.

This is a course for those who have a passion for Italian food and who want to learn how to cook a different type of Italian cuisine from Italian chefs with authentic family recipes. All abilities are welcome and this is a fun and inclusive course. The only qualification needed is a love of food. As well as the cookery you will holiday in the beautiful tranquil setting of the Apennine mountains deep in a nature park where wild boar, porcupine and deer run free. There is plenty of opportunity for relaxing and visiting local markets as well as visits to some of Italy’s most beautiful historic towns such as Urbino and San Leo.

 

 

 

 

 

During your five days at La Colombaia , you will have 3 afternoon sessions at the house in the newly equipped kitchen and a fourth session will be held at an idyllic medieval mill by a river in the village of Peglio. The cook Anna Faggi will show you her organic garden, give a tour round the mill which has much of it’s original equipment and then teach you to cook a meal which will be served later for supper. Each day will follow a similar timetable and will feature the following;

course completion, at leisure to explore the beautiful surroundings until supper time

Supper with wine served with your fellow students either on the terrace or in the dining room

Subsequent mornings will be either at leisure or students can visit local markets or historical towns of interest. We strongly advise students to rent a car as there are many beautiful towns within easy reach. We can also arrange a visit to cheese making demonstrations and local vineyards and cheese making.

Wednesday is a free day and students are at leisure.

There is a single supplement of £100.00

Ryanair fly to Ancona which is 2 hours from the house or Bologna Forli which is 3 hours drive from the house. Rimini is another alternative and is again about 2 hours from the house.
